Chaa Da Cup - Please!

This is my version of home cooked Punjabi-Kenyan heartiness.
No.7 – Shakshuka with Punjabi Pronte (Chapatis)
15 different ingredients - 30min to prepare - serves 5 people
Ingredients:
1 teaspoon (flat) – salt.
1 teaspoon (flat) – turmeric powder (haldi).
1 teaspoon (flat) – cumin seeds (jeera).
3 large (1 bowl) – tomatoes (puree).
1 large – red onion (diced).
1 bowl – mixed vegetables (peas, carrots, sweet corn, green beans (posho)).
2 large cloves – garlic.
1 large stem – ginger.
3 long – green chillies.
5 bunches – coriander (dhania).
6 large – eggs.
1 bowl – plain flour.
250ml – water.
Method:
Making the Pronte (Chapatis):
In a large dish knead together a bowl of plain flour and water until a dough is formed.
Make small balls of the dough and roll them out into large thin circles making a pronte (chapatis). Using a tava (griddle) cook the pronte (chapatis), one at a time, on both sides shallow frying them in ghee.
Once the pronte (chapatis) are crispy on both sides, take them off the tava (griddle) and let them rest on a plate soaking off on a paper towel.
Making the Shakshuka:
In a large pan add 3-4 tablespoons full of vegetable oil, once the oil is hot add 1 teaspoon (flat) of cumin seeds (jeera) and 1 bowl of diced red onions. Let the 2 ingredients cook lightly for a few minutes further adding a grinded paste of ginger and garlic to the ingredients.
Once all the ingredients have turned golden brown add 1 bowl (3 large tomatoes) of tomato puree, 1 teaspoon (flat) of salt, turmeric powder (haldi) and 5 bunches of thinly sliced coriander (dhania).
Let all the ingredients cook together for a 10-15 minutes then add all the vegetables and 3 long green chillies, thinly sliced, into the mixture allowing a thick curry paste to form.
Crack open 6 large eggs onto the thick curry paste and cover the pan with a lid, leaving the eggs to poach on low heat creating the Shakshuka. After 15 minutes check the eggs and see if they’re cooked, to taste – yolk: runny/cooked.
Finally, on a large plate place a pronta (chapati). Cut the shakshuka into 6-8 large pieces and place 1 piece on-top of the pronta (chapati), cover the shakshuka with another pronta (chapati) creating a hefty Punjabi Pronta (Chapati) Shakshuka dish and serve this with a hot-steaming Chaa Da Cup – Please!
