Chaa Da Cup - Please!

This is my version of home cooked Punjabi-Kenyan heartiness.


No.47 – Masala Zucchini


9 different ingredients - 1hour to prepare - serves over 5 people


Ingredients:

1 large - zucchini (diced).


1 large - white/red onion (sliced).


1 large - tomato (pureed)


1 handful - methi (fenugreek) (finely chopped).


3 cloves - garlic (paste).


1 thick slice - ginger (paste).


2 - green chillies (paste).


1 tsp (flat) - salt.


1/4 tsp - Haldi (turmeric powder).


1/4 tsp - jeera (cumin seeds).


Method:

Wash, peel; and cut your zucchini into cubes, slice your onion into thin long slices. puree 1 large tomato, and grind your garlic, ginger and green chillies into a paste.

To a pan add some ghee or cooking oil and let it warm up, then add jeera (cumin seeds) and let them pop slightly in the warm oil. Add your thinly sliced onions to the jeera and let them cook, turning into golden brown, then add your garlic, ginger and green chilli paste and let that cook. Once you see your garlic turning golden, add the tomato puree to avoid any ginger from sticking down onto the pan and mix everything well.

Allow the paste to come to a slow simmer and then add 1 tsp (flat) salt and 1/4 tsp of haldi (turmeric powder), and give everything a last good mix, let all the ingredients in the pan cook thoroughly, place a lid over if you like, and let it all come to a good bubble.

Once you see small to big bubbles appear, add the zucchini cubes into the pan, cover the pan and let the zucchini cook properly until soft on low heat. It should take about 10-15min.


Finally, once the zucchini is soft and tender, take a scoop full into a bowl and serve it with a steaming hot Chaa da Cup - Please!
