Chaa Da Cup - Please!

Chaa Da Cup - Please! is a food blog created for all food lovers

(n.b - mostly chai loving lovers).

The various mixtures of ingredients and recipes complement a hearty Chaa Da Cup! - you'll probably be looking (asking) for one ;)

This is my version of home cooked Punjabi-Kenyan heartiness.

No.19 – Dokra

13 different ingredients - 1.5hours to prepare - serves 5 people

Ingredients:

150ml - water.


1 bowl - plain yogurt.

1 bowl - sooji (semolina flour).


1 bowl - besan (gram flour).


1 packet - eno.


1/4 teaspoon - rai (mustard seeds).


2 medium stems - ginger (paste).


2 large - green chillies (paste).


1 teaspoon (flat) - curry leaves.

1 teaspoon (flat) - salt.


1/4 teaspoon - haldi (turmeric powder).

1/4 teaspoon - red chilli powder.


1/4 teaspoon (flat) - hing (asafoetida powder).


Method:

Making the dokra mixture:

In a large bowl add 1 medium sized bowl of sooji (semolina flour), besan (gram flour), and yogurt. Mix the ingredients together and allow the mixture to rest, for about an hour, in order for it to rise.

Once the mixture has risen add 1 packet of Eno and 150ml of water to it, giving all the ingredients a good mix. Then add salt, haldi (turmeric powder), hing (asafoetida powder), ginger and green chilli paste to the mixture.

Give all the ingredients a final good thorough mix allowing them to combine and form a dokra paste.


Cooking the dokra:

Pour the dokra paste into a medium sized round steel dish/plate.

Fill half of a large pot with water, place a smaller pot into the middle of the large pot to place the dish/plate on. Cover the large pot with a lid - cover the lid with a cloth completely around it - (the idea is to cook the dokra with the steam that will be formed in the large pot).

Allow the steam in the large pot to cook the dokra over medium heat for about 25-30min.


Once the dokra is cooked, you can check if it's cooked by poking a knife through the middle of the dokra- it will either be cooked or still raw, take it out of the large pot and leave it on a side to slightly cool off.


Making the thurka:

In a small pan add some oil, rai (mustard seeds) and curry leaves. Let all the ingredients warm up and slightly cook for 2-3min. Take the pan off the heat and pour the mixture onto the cooked dokra, sprinkle some red chilli powder and serve the dokra with a steaming hot Chaa Da Cup - Please!
